Kielbasa Bites

I've mentioned before that I'm on a mission to eat my way through everything that's been hiding in my freezer. During my latest freezer inventory, I came across a package of kielbasa that was dangerously close to being tossed out. Then, as if Facebook was reading my mind, this recipe popped into my feed.

I've made several recipes from Butter Your Biscuit before, so I had pretty high expectations. 

Now, let me confess to a classic Jenn cooking moment. Someone (and we'll just leave that person unnamed) didn't read the ingredient list carefully before getting started. I only had one package of kielbasa, so I made the recipe with what I had. It wasn't until I was wondering why there seemed to be an excessive amount of sauce that I looked back at the recipe and realized the very first ingredient called for two packages of kielbasa.

Mystery solved.

That also explains why the sauce didn't get quite as thick and sticky as I expected at first. After letting it sit for a couple of minutes, it eventually thickened up nicely, but it definitely would have coated the sausage better if I had actually used the correct amount.

The sauce was a little sweeter than I personally prefer, but overall this was a really tasty recipe. I can easily see serving these at a party as an appetizer, and I don't think they'd last very long. Even with my accidental sauce-to-kielbasa ratio, they were still a hit.


Kielbasa Bites
Recipe from Butter Your Biscuits
Serves 6
  • 2 pkgs beef kielbasa
  • 1 ½ cups brown sugar
  • 2 tablespoons white vinegar
  • 2 tablespoons Dijon mustard
  • ½ red pepper flakes optional

Preheat the oven to 350 degrees

Slice the kielbasa links into ½ inch slices and place them on a foil lined baking sheet

Heat a medium sauce pan on medium low heat. Add the brown sugar, vinegar, mustard and red pepper flakes. Let the brown sugar melt, stirring every couple of minutes.

Pour over the sausage and toss them with a spatula until coated

Bake 15 minutes, give them another toss and bake another 15 minutes.
